Well, consider the loading screens in GW. Especially in Prophecies they do not actually show the location, but an artistic impression of the location.

However, one should realize that Dociu and the other artists 1) do not exclusively work for ArenaNet, and 2) are real artists - they also "just paint", it's not all conceptwork.
